Despite the winter weather, the dining room was quite warm and this provided such a pleasant refreshment. Tsukemen involves chilled noodles and a very hot bowl of dipping broth, here made with plenty of richness and bite.

With its polished new place on 2nd Avenue, it would be hard to imagine the 50 years plus history that Sanpoutei has under its belt. Based on the five types of ramen ordered this evening, sticking to the top of the menu and their house special shoyu soy sauce based is the way to go. Chef Rose Noel will head up the kitchen. Surrounded by crisp cucumbers and topped with sesame, the chicken rests in a shallow pool of ginjo sake sauce and has the nice zip of Korean chilli powder in every bite. Many groups of Japanese people were the main clientele, as the restaurant must have been making quite an impact in local Japanese press. These are pan-fried pork gyoza, served with a very simple but somehow wonderful vinegar soy dipping sauce.

The aburi chashu is melt-in-your-mouth tender. Hailing from the Niigata prefecture, the restaurant group includes almost 50 locations. Apologies for the lack of noodle photo. While ramen shops are opening to varying degrees of success in Singapore, Sanpoutei Ramen which just opened at Holland Avenue looks like the one which will set itself apart from its competition. The Grill is set to have stunning views, with an indoor-outdoor bar and a patio facing the water.

The perfect climate for sake production combined with the advanced brewing techniques creates an environment that is destined to nurture the highest quality sake in the world. Other dishes will include handmade gyoza, edamame with Sichuan peppercorn, dake drunken chicken and mapo ramen. The 80-seat dinner-only restaurant and bar inside the Dominick Hotel will be seasonally driven and American with Japanese influences. The menu from chef Paul Donnelly who spent time cooking in Southeast Asia will include Vietnamese-style yellow curry with butternut squash, whole grilled squid with green nahm jim and sour mango, and a chicken and shrimp relish with coconut and crispy betel leaves. Its broth is boiled for six hours using vegetables, chicken, pork bone and 2 types of dried sardine all imported from Japan — one of the few ramen shops in Singapore with fish base in its soup. Highlights include handmade , pizza, sandwiches, sushi, salads, a raw bar, a bakery, a coffee lab, soups, antipasti, a juice bar, a creperie and gelato.

Elmo Public Market will be opening on South Congress Avenue in fall 2020. This all-day Japanese restaurant will include seasonal bento boxes and super trendy Japanese souffle pancakes during the day and izakaya-style and large-format dishes meant to be shared including hot pots for dinner. It appeared that each different ramen was using the same thick housemade noodles here, wavy and containing a great chew. The signature shoyu soup stock while looking clear and thin, packs flavour with the a light touch of fish savour without being too powering. Topped with a wasabi soy sauce, be sure to mix this and the small egg yolk thoroughly before digging in. Niboshi refers to the dried sardines that go into the ramen stock, a funkiness that is light and so pleasant. .

The menu will focus primarily on seafood and vegetables, with dishes like grilled maitake mushrooms with surf clams and daikon sprouts, and tilefish with edamame, pickled daikon radish and cilantro. A lobby-level bar with a menu of fine sipping tequilas and rare Mexican libations like pulque and komil completes the concept. Niigata city is almost due north of Tokyo but sits on the west coast of Honshu. Midway through someone should come around and refill the bowl with more hot broth, which did not happen, but it must be assumed they will iron out this kink as well. Instead of Shaoxing rice wine, they of course substitute Niigata sake here to cook the chicken with.

Though I rarely talk about menma bamboo shoots , this bowl has delicious ones within. A wide range of sake from Niigata is available. The prefecture it lives in of the same name is thin and hugs the coast, the sea is very important here. Additionally, continuous snowing creates an air purifier which is crucial for the sake brewing process. This is available in a non-spicy bowl as well, but both were found to be a bit too thick, almost like the tsukemen. Its signature ramen is made with a niboshi dashi dried baby sardines.
